Hasta luego amor de mi vida 🤍 see you soon!


Yesterday August 2, at 10:30am my best friend and love of my life crossed the rainbow.
We have been together since 2008, when by chance, my 8 year old cousin wanted to breed a shnauzer. The thing is that this puppy, which I wanted to be a beagle, would stay with me after a month, because she didn't live in Lima.
At the vet's office they took the last 2 mini shnauzers out of a basket waiting for an owner. When they put the two puppies on the floor, the little Scotty (no name at that time) came running to me, and at that moment we decided that this would be the "chosen one", fortunately his little brother found his family at the same time because a woman who was there saw him and fell in love.
When we took Scotty to my house, nobody liked him, because he was a black hairball.


That's how when I was 19 years old he formally came into my life, from that moment on... we didn't separate, I would say that we have lived many stages together, from studying at the university, the dawns, the loves (Scotty sorry for having given you so many imposter parents that didn't work), the disappointments, specializations, the small career changes, the master's degree. Scotty literally is just another graduate, but unfortunately he could no longer come with me to fulfill my dream of studying abroad, because of his age, this was impossible.



I could expand infinitely on all that we lived together, and the pure love that it means and will always mean to me. I have never felt that someone loved me the way he showed me, his look, his love, his patience, his kisses, and I feel that a part of me is incomplete, but I also know that he will always be guiding my steps and taking care of me, for me he is my angel, and we will meet when it is my turn to leave, so this is just a see you soon, I love you with all my soul my baby.

Night life !


The other day I was asking my boyfriend if there were any special places here in Montreal, like bars or discos, where they play rock music, because in Lima I used to go to the "Noche de Barranco" from time to time to dance with friends and listen to indie or rock music.
And since we both like that kind of music, it would be great to spend a Saturday night in a place like that, but he told me that the ones here are really crappy...

I guess I have to wait....for a next visit to Lima!

Dua Lipa in Montreal !

 And I think is gonna be a long long time...!


Last Saturday morning I was scrolling through my IG account when suddenly an ad popped up reminding me that Diosa Lipa was coming on Monday to Montreal to give a concert.

I was hesitating whether to go or not, since she will also be performing next Sunday in Osheaga, anyway, the thing is that I was just waking up, with one eye half closed, so my hand just went straight to pay for the ticket...and just like that, on Monday I was already at the concert at the Centre Bell!
I wasn't very close to the stage, because there were only a few spaces left, but I can say that there wasn't a moment when I didn't sing, jump or dance to her songs.

She is a very good singer and dancer, I definitely recommend not to miss a Dua concert!

Oatmeal cookies

 



These oatmeal cookies are the best and easy to prepare!
Preparation time: 15 minutes
Servings: 24 cookies
Preheat the oven to 350 degrees F

Ingredients:

Dry ingredients
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon sea salt
- Pinch of nutmeg

Wet ingredients
- 1 cup unsalted butter at room temperature
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tablespoon pure vanilla extract
- 3 cups of oats
- Flaked sea salt for sprinkling on cookies

Instructions:

Dry ingredients
In a bowl whisk together the dry ingredients and set aside.

Wet ingredients
In the bowl of a stand mixer add the butter, brown sugar and granulated sugar (white sugar), beat it until creamy for 2 minutes, then add the egg, egg yolk and vanilla extract and beat until combined smooth.
With the mixer off add the mixed dry ingredients and combine in a low level, finally stir in the oats.

Baking:
Use a line large baking sheet with parchment paper, scoop the cookie dough into round balls, it is 2 tablespoon per ball, and bake it for 12 minutes.
Remove the cookies from the oven and sprinkle the cookies with flaked sea salt, let the cookies cool on the baking sheet for 5 minutes.

Lemon Blueberry Cake

 




I'm happy to share with you this delicious cake, I usually prepared them as a gift because you can make a lovely presentation with the blueberries and the frosting on top!

Preparation time: 20 minutes
Cook time: 35 minutes
Serving: 12 cake slices
Preheat the oven to 350 degrees F

Ingredients:

Cake:
Dry ingredients
- 2 cups all purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt

Wet ingredients
- 1 cup granulated sugar
- zest of 1 large lemon 
- 2 large eggs room temperature
- 3/4 cup canola oil
- 1 cup plain greek yogurt
- 1/3 cup fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 1/4 cups blueberries

Frosting:
- 1 1/2 cups confectioner's sugar
- 1 tablespoon unsalted butter melted
- 2 tablespoons fresh lemon juice
- Blueberries for decoration on top of the cake

Instructions:

Dry ingredients
In a bowl sift together the flour, baking powder and salt.

Wet ingredients
In other bowl combine the sugar and lemon zest rubbing both together with your fingers until fragrant, add the eggs, oil, yogurt, lemon juice and vanilla extract. Stir until well combined.

Add the dry ingredients to the wet ingredients and whisk until the batter is smooth, then gently fold in the blueberries, that are previously covered with flour so that they do not remain at the bottom of the cake.

Poor the batter into a prepared round cake pan. (The cake pan should be covered with butter or nonstick cooking spray, at the botton of the pan you can put a parchment paper sheet so that the cake does not stick to it).

Baking 
Bake for 35-50 minutes, it depends on your oven, until a toothpick inserted in the center comes out clean. After this remove the cake and let it cool for 20 minutes, then run a butter knife around the edges to release the cake from the pan and remove the parchment paper sheet too, let it cool completely.

Decoration with frosting:
For the lemon frosting, in a bowl put all the ingredients and whisk until smooth.

When the cake is cool pour the frosting onto the center of the cake with a spatula and garnish with blueberries.

LIMA



Lima was founded by Francisco Pizarro in 1535 on the Catholic holiday of Epiphany, when the Three Kings visited the baby Jesus, and was therefore known as Ciudad de los Reyes or City of the Kings. Chocolate cookies




You are going to love this double chocolate cookies made with basic ingredients like cocoa powder and chocolate chips.

Preparation time: 15 minutes
Cook time: 10 minutes
Serving: 33 cookies
Preheat the oven to 350 degrees F.

Ingredients:

Dry ingredients
- 2 1/4 cups all-purpouse flour
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 3/4 cup cocoa powder

Wet ingredients
- 1 cup unsalted butter at room temperature
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 teaspoon of vanilla extract

Decoration
- 1 cup chocolate chips (I usually use milk chocolate chips because I love sweet things but you can put also semi-sweet or dark chocolate chips)
- 1 cup chocolate chunks
- Sea salt flakes for sprinkling on cookies at the end

Instructions:

Dry ingredients
In a bowl whisk together all the dry ingredients and set aside.

Wet ingredients
In a mixer, cream the unsalted butter with the sugars until smooth, add the eggs one by one, also the vanilla extract and mix until combined.
Gradually add the mixed dry ingredients and beat until just combined, finally stir the cups of chocolate chips and chunks and your dough is ready to bake!

Time to bake
Scoop the dough into rounded tablespoons and place them on prepared baking sheet with parchment paper.
With the oven already in 350 degrees F bake the cookies for 8 minutes and remome the sheet from the oven, you can add chocolate chunks gently into the top of the cookies for make them look better while they are still warm and put them back in the oven for 2 more minutes until they get soft in the center but set around the edges, remove them and sprinkle with flaky sea salt.
Let them sit on the baking sheet for 3 minutes, and move them to a cooling rack until they are completely cool.

You can store them in a airtight container for up to 4 days, or freeze the backed cookies or the cookie dough.
